Applewood Smoked Bacon Wrapped Tenderloin

Preparation

  1. Pre-heat grill to 300° setup for indirect cooking.
  2. Put together your bacon weave on a cutting board or clean surface.
  3. Season all sides of the pork tenderloin.
  4. Place your tenderloin on the edge of your bacon weave and roll it tightly,tucking the loose ends on the bottom side.
  5. Apply a little lemon pepper on top of the bacon.
  6. Place 2 applewood chunks on your hot coals.
  7. Place the tenderloin over indirect heat and cover your grill.
  8. Smoke around 30 to 60 minutes depending on the size of your pork tenderloin.
  9. We are looking to finish this cut at 145° internal temperature.
  10. Allow to rest 15 minutes before slicing and serving.
