Hot & Sweet Apricot Spare Ribs

Ingredients

Rub

Apricot Sauce

Preparation

Apricot Sauce

  1. Mix sauce ingredients in a small saucepan.
  2. Bring to a simmer over medium heat.
  3. Stir and simmer 10 minutes or until all ingredients are well incorporated and sauce is smooth.
  4. Remove from heat and sit aside.

Ribs

  1. Pre-heat smoker to 275°F.
  2. Remove membrane from the back of the ribs.
  3. Apply your rub generously to both sides of the ribs.
  4. Allow ribs to rest for 15 minutes.
  5. Place ribs on the smoker,add 2 cherry chunks and spritz lightly with beer.
  6. Smoke ribs 3 hours,spritzing with beer every hour.
  7. At 3 hours lay foil over the ribs loosely,but do not wrap them.
  8. Continue to cook 2 more hours.
  9. At 5 hours check the ribs for tenderness.
  10. When they have reached your desired tenderness,baste with your apricot bbq sauce and cook for an additional 30 minutes.
