Loaded Potato Soup

Ingredients

Preparation

  1. Cook bacon in a 4 quart dutch oven,remove all grease except 2 tablespoons.
  2. Dice onions & saute all but half of the green onions for 10 minutes.
  3. Add potatoes,pepper & chicken stock,bring to a boil.Cook potatoes until they mash easily.
  4. Crumble half of the bacon & add it to the soup.
  5. Add 1 cup of milk.
  6. Add the can of cheddar cheese soup.
  7. Add one cup of sharp cheddar.
  8. Add sour cream,stir well.
  9. Use the back of a wooden spoon or a potato masher to mash about half of the potatoes..Stir until well blended.
  10. Bring to a slow simmer and cook until slightly bubbling.

Serve hot.

Top with cheddar cheese,bacon and green onions.
